Chocolate Fudge Icing

This is the kind of Chocolate icing that sets so if you want to decorate do it immediately otherwise sprinkles will not stick.

  • 90g butter
  • 1/3 cup water
  • 1/2 cup caster sugar
  • 1 1/2 icing sugar
  • 1/3 cup cocoa
  1. Simmer butter, water and caster sugar together until dissolved
  2. Sift icing sugar and cocoa and mix together, put in fridge until thickened (about 20mins)
  3. Beat again until spreadable

Chocolate Cake with applesauce

  • 2 1/2 cups flour
  • 1/4 t salt
  • 1 t bi-carb soda
  • 110g butter / 1 stick/ 1/4 pound
  • 4 oz oil / 120 ml
  • 1 cup water
  • 1/2 cup cocoa more if you want it really chocolaty
  • 4oz buttermilk
  • 2 eggs
  • 1/3 cup applesauce
  • 2 cups sugar
  1. Sift flour, salt and bi-carb into bowl
  2. In a pot heat butter, oil, water and cocoa till melted together
  3. Mix buttermilk, eggs and applesauce then add sugar in bowl
  4. Add sifted ingredients to egg ingredients and beat
  5. Fold in the chocolate mixture and combine

350 deg F for 40mins or until stick comes out dry


Bobotie

  • 500g mince
  • 2 onions chopped
  • 1 slice of bread (I usually use more)
  • 1/2 cup beef stock
  • 1 T garlic
  • 1 T fresh grated ginger
  • 1 T apricot jam/Chutney or both
  • 1 apple grated
  • 1 T curry powder (I use Madras)
  • 1 t mixed herbs
  • 1 t turmeric
  • 1 T lemon juice
  • 1/2 cup chopped apricots and raisins

brown mince and onions, mix all other ingredients together and add to meat mixture. Lastly add apricots and raisins, salt and pepper.

Pour topping mix over top and cook in 180 deg C oven for 40mins.

  • 1 Cup sour cream
  • salt and pepper
  • 2 eggs
  • bay leaves (pushed into the top of the topping)

Best Oatmeal Cookies around (if I do say so myself)

This recipe is one that I found online and “tweaked” they have all come out great with crispy edges and a soft chewy center, just the way I like them.

Ingredients

250g Butter
1 Cup white sugar
1 Cup brown sugar
1 t Vanilla Essence
2 Eggs
2 Cups Flour
1 t Baking Soda
1 t salt (I forgot this and they still taste good)
1 1/2 t Cinnamon
3 Cups Oats

I like to add one or all of the following to the total of about 1 Cup

  • chopped dried fruit; apricots, pineapple, cranberries, raisins
  • nuts
  • chocolate chips

Directions

  1. Cream butter and sugars well
  2. Add Vanilla E
  3. Mix in Eggs well
  4. Add Flour, Baking Soda, Salt and Cinnamon
  5. Fold in “other” ingredients of choice

Bake 190 deg C / 375 deg F for about 8-10 min

Chocolate Cake

250g dark chocolate

125g butter

3/4 cup castor sugar

6 XL eggs (separated)

1/2 t vanilla

3/4 cup cake flour

1 T cocoa

1/4 t bicarb of soda

1/4 t cream of tartar

  • Heat oven to 160 deg C
  • Line a deep cake pan with paper
  • Melt chocolate in microwave
  • Cream butter and sugar together well
  • Beat in 5 of egg yolks and vanilla to chocolate (keep extra egg yolk for glaze)
  • Sift flour, cocoa and bicarb and mix with chocolate
  • Beat egg whites with cream of tartar until soft peaks
  • Fold into chocolate mixture
  • Pour into pan and bake for 60-70 mins (cupcakes 30mins)
  • Make glaze and pour over warm cake

Chocolate Glaze for cake

150g Chocolate
1 Egg yolk
3/4 cup Sugar
1/4 cup plus 2 T Water
pinch Cream of Tartar

  • Melt chocolate
  • Beat in egg yolk
  • Boil sugar, water and cream of tartar for one minute
  • Beat sugar water into chocolate
  • Pour over cake

Buttermilk Rusks

12 cups flour (3lbs) I use Oatmill flour for a nutty taste

2 cups sugar

1 t salt

12 t BP if you are not using self-raising flour

500g butter

2 cups buttermilk

3 eggs (just made them and forgot eggs will let you know how they turn out)

  • mix dry ingredients together
  • rub in butter
  • add buttermilk and eggs and knead together
  • divide into 3-4 loaf pans and bake for 1 hour at 180 deg C
  • cool and cut
  • dry in low heat oven over night
